Ingredients
- Sweet Potatoes: 4 medium-sized, scrubbed and pierced with a fork
- Olive Oil: 2 tablespoons, for drizzling
- Feta Cheese: 1 cup, crumbled
- Chickpeas: 1 can (15 oz), drained and rinsed
- Cherry Tomatoes: 1 cup, halved
- Red Onion: 1 small, finely chopped
- Fresh Parsley: 1/4 cup, chopped
- Fresh Mint: 1/4 cup, chopped
- Lemon Juice: 2 tablespoons, freshly squeezed

Instructions
- Preheat the oven to 400°F (200°C).
- Place the sweet potatoes on a baking sheet and drizzle with olive oil, then season with salt and pepper.
- Bake for 45-50 minutes, or until the sweet potatoes are tender and easily pierced with a fork.
- While the sweet potatoes are baking, prepare the filling by combining feta cheese, chickpeas, cherry tomatoes, red onion, parsley, mint, and lemon juice in a bowl.
- Once the sweet potatoes are done, remove them from the oven and let them cool slightly.
- Slice each sweet potato in half lengthwise and gently scoop out some of the flesh to create space for the filling.
- Fill each sweet potato half with the Mediterranean mixture, pressing down gently to pack it in.
- Return the stuffed sweet potatoes to the oven for an additional 10 minutes to warm the filling.
