Ingredients

  • Sweet Potatoes: 4 medium-sized, scrubbed and pierced with a fork
  • Olive Oil: 2 tablespoons, for drizzling
  • Feta Cheese: 1 cup, crumbled
  • Chickpeas: 1 can (15 oz), drained and rinsed
  • Cherry Tomatoes: 1 cup, halved
  • Red Onion: 1 small, finely chopped
  • Fresh Parsley: 1/4 cup, chopped
  • Fresh Mint: 1/4 cup, chopped
  • Lemon Juice: 2 tablespoons, freshly squeezed
  • Salt: to taste
  • Pepper: to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the sweet potatoes on a baking sheet and drizzle with olive oil, then season with salt and pepper.
  3. Bake for 45-50 minutes, or until the sweet potatoes are tender and easily pierced with a fork.
  4. While the sweet potatoes are baking, prepare the filling by combining feta cheese, chickpeas, cherry tomatoes, red onion, parsley, mint, and lemon juice in a bowl.
  5. Once the sweet potatoes are done, remove them from the oven and let them cool slightly.
  6. Slice each sweet potato in half lengthwise and gently scoop out some of the flesh to create space for the filling.
  7. Fill each sweet potato half with the Mediterranean mixture, pressing down gently to pack it in.
  8. Return the stuffed sweet potatoes to the oven for an additional 10 minutes to warm the filling.
