Ingredients
Scale
- For the Chicken:
- 4 boneless, skinless chicken breasts
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Vegetable oil for frying
- For the Blackberry Heat Sauce:
- 1 cup fresh blackberries
- 1/2 cup sugar
- 1/4 cup apple cider vinegar
- 1 teaspoon red pepper flakes
- 1 tablespoon soy sauce
- 1 tablespoon cornstarch mixed with 2 tablespoons water
Instructions
- Marinate the chicken breasts in buttermilk for at least 1 hour in the refrigerator.
- In a shallow dish, combine flour, garlic powder, onion powder, paprika, salt, and pepper.
- Heat vegetable oil in a large skillet over medium-high heat (about 350°F).
- Remove chicken from buttermilk, allowing excess to drip off, then dredge in the flour mixture, coating evenly.
- Fry the chicken for 6-7 minutes on each side or until golden brown and cooked through (internal temperature should reach 165°F).
- For the sauce, combine blackberries, sugar, apple cider vinegar, and red pepper flakes in a saucepan over medium heat. Cook until blackberries break down, about 5 minutes.
- Stir in soy sauce and cornstarch mixture, cooking until the sauce thickens, about 2-3 minutes.
- Serve the fried chicken drizzled with blackberry heat sauce.
Notes
- This dish can be made ahead by frying the chicken and reheating in the oven at 350°F for 10-15 minutes.
- Store leftover chicken in an airtight container in the refrigerator for up to 3 days.
- For a gluten-free option, substitute all-purpose flour with almond flour.
