- 2 cups fresh peaches, sliced
- 1 tablespoon lemon zest
- 1 tablespoon fresh thyme leaves
- 1/4 cup sugar
- 1 tablespoon cornstarch
- 1/2 teaspoon vanilla extract
- 1 pre-made pie crust
- 1 egg, beaten (for egg wash)
- 1 tablespoon butter, cut into small pieces
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, combine sliced peaches, lemon zest, thyme, sugar, cornstarch, and vanilla extract.
- Roll out the pie crust and cut it into small circles.
- Place a spoonful of the peach mixture in the center of each circle.
- Fold the edges of the crust over the filling, leaving the center exposed.
- Brush the edges with beaten egg and sprinkle with sugar.
- Dot the filling with small pieces of butter.
- Bake for 25-30 minutes or until the crust is golden brown.
- Let cool slightly before serving.
