Description

Delicious mini peach galettes infused with lemon zest and thyme, perfect for a fresh and flavorful dessert.


Ingredients

  • 2 cups fresh peaches, sliced
  • 1 tablespoon lemon zest
  • 1 tablespoon fresh thyme leaves
  • 1/4 cup sugar
  • 1 tablespoon cornstarch
  • 1/2 teaspoon vanilla extract
  • 1 pre-made pie crust
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon butter, cut into small pieces

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine sliced peaches, lemon zest, thyme, sugar, cornstarch, and vanilla extract.
  3. Roll out the pie crust and cut it into small circles.
  4. Place a spoonful of the peach mixture in the center of each circle.
  5. Fold the edges of the crust over the filling, leaving the center exposed.
  6. Brush the edges with beaten egg and sprinkle with sugar.
  7. Dot the filling with small pieces of butter.
  8. Bake for 25-30 minutes or until the crust is golden brown.
  9. Let cool slightly before serving.
