Instructions
- Preheat your oven: Set your oven to 350°F (175°C). Grease your 9×13 inch baking pan thoroughly.
- Melt the butter: In a medium bowl, melt the butter until it’s fragrant. Stir in granulated sugar until smooth.
- Add the eggs: Incorporate the eggs one by one, mixing well after each addition. Add the vanilla extract.
- Combine dry ingredients: In a separate bowl, whisk together flour, cocoa powder, and salt. Gradually add this to the wet ingredients.
- Bake the brownies: Pour the brownie batter into the prepared pan and spread evenly. Bake for 25-30 minutes.
- Cool completely: Allow the brownies to cool in the pan for 10 minutes, then transfer to a wire rack.
- Prepare the mint layer: Mix powdered sugar, milk, and peppermint extract until smooth. Spread over the cooled brownies.
- Create the chocolate topping: Melt chopped chocolate in a microwave-safe bowl, then pour over the mint layer.
- Set and slice: Let the brownies sit until the chocolate hardens. Cut into squares and serve.
