- 1 cup unsalted butter
- 2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup cocoa powder
- 1/2 teaspoon salt
- 1 cup mint chocolate chips
- 1 cup heavy cream
- 8 ounces semi-sweet chocolate, chopped
- 1 teaspoon peppermint extract
Instructions
- Preheat the oven to 350°F (175°C) and grease your 9×13 inch baking pan.
- Melt the butter in a medium saucepan over medium heat.
- Mix in the granulated sugar, eggs, and vanilla extract until light and fluffy.
- Combine the flour, cocoa powder, and salt until just mixed.
- Add the mint chocolate chips and stir gently.
- Bake for 25-30 minutes. A toothpick should come out with a few moist crumbs.
- Prepare the ganache by heating the heavy cream and pouring it over the chopped chocolate; stir until smooth.
- Add peppermint extract to the ganache.
- Top the cooled brownies with the ganache.
- Slice into squares and serve.
Notes
Store brownies in an airtight container for up to a week or freeze for up to three months. Allow to cool completely before cutting.
