Ingredients

  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup cocoa powder
  • 1/2 teaspoon salt
  • 1 cup mint chocolate chips
  • 1 cup heavy cream
  • 8 ounces semi-sweet chocolate, chopped
  • 1 teaspoon peppermint extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your 9×13 inch baking pan.
  2. Melt the butter in a medium saucepan over medium heat.
  3. Mix in the granulated sugar, eggs, and vanilla extract until light and fluffy.
  4. Combine the flour, cocoa powder, and salt until just mixed.
  5. Add the mint chocolate chips and stir gently.
  6. Bake for 25-30 minutes. A toothpick should come out with a few moist crumbs.
  7. Prepare the ganache by heating the heavy cream and pouring it over the chopped chocolate; stir until smooth.
  8. Add peppermint extract to the ganache.
  9. Top the cooled brownies with the ganache.
  10. Slice into squares and serve.

Notes

Store brownies in an airtight container for up to a week or freeze for up to three months. Allow to cool completely before cutting.
