- Crust:
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¼ cup granulated sugar
- Filling:
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup sour cream
- ½ cup brewed espresso, cooled
- 1 tsp vanilla extract
- ½ cup cocoa powder
- Topping:
- 1 cup heavy whipping cream
- 2 tbsp powdered sugar
- 1 oz dark chocolate, grated
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
- Bake the crust for 10 minutes, then remove and let it cool.
- In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the sour cream, cooled espresso, vanilla extract, and cocoa powder until fully combined.
- Pour the filling over the cooled crust and smooth the top.
- Bake for 55-60 minutes, or until the center is set but slightly jiggly. The edges should be firm.
- Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
- Refrigerate for at least 4 hours or overnight before serving.
- Before serving, whip the heavy cream with powdered sugar until soft peaks form, then spread over the cheesecake and sprinkle with grated chocolate.

- Store leftovers in an airtight container in the fridge for up to 5 days.
