Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, starting and ending with the flour mixture.
- Fold in the Biscoff spread until just combined.
- Pour the batter into a greased 9×13 inch baking pan and smooth the top.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool completely in the pan on a wire rack.
- For the frosting, beat the softened butter until creamy, then gradually add the powdered sugar, Biscoff spread, heavy cream, and vanilla extract until smooth and fluffy.
- Once the cake is cool, spread the frosting evenly over the top and cut into slices to serve.
