  • Cake:
    • 2 ½ cups all-purpose flour
    • 2 ½ tsp baking powder
    • ½ tsp salt
    • 1 cup unsalted butter, softened
    • 2 cups granulated sugar
    • 4 large eggs
    • 1 tbsp vanilla extract
    • 1 cup whole milk
    • 1 cup rainbow sprinkles
  • Frosting:
    • 1 cup unsalted butter, softened
    • 4 cups powdered sugar
    • 2 tbsp heavy cream
    • 1 tsp vanilla extract
    • ½ cup rainbow sprinkles (for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour three 9-inch round cake pans.
  3. In a bowl, whisk together flour, baking powder, and salt; set aside.
  4. In a large mixing bowl, cream the butter and sugar until light and fluffy, about 3-4 minutes.
  5. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  6. Gradually add the dry ingredients to the wet mixture, alternating with milk, starting and ending with the flour mixture.
  7. Fold in the rainbow sprinkles gently.
  8. Divide the batter evenly among the prepared pans and smooth the tops.
  9. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  10. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  11. For the frosting, beat the butter until creamy, then gradually add powdered sugar, heavy cream, and vanilla until smooth and fluffy.
  12. Once the cakes are cool, frost the top of one layer, add the second layer, and frost again. Repeat with the third layer and cover the entire cake with frosting.
  13. Decorate the top with additional rainbow sprinkles.
