- 1 cup honey
- 2 cups rolled oats
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips
Instructions
- In a large bowl, mix together peanut butter and honey until well combined.
- Add rolled oats and vanilla extract, stirring until fully incorporated.
- Fold in chocolate chips.
- Using a spoon, scoop out the mixture and form into small balls.
- Flatten each ball slightly and create a sandwich with another flattened ball.
- Place cookies on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to set.
