  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 8 oz cream cheese, softened
  • 4 cups powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your cake pans by greasing and flouring two 9-inch round pans.
  3. Whisk the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt in a medium bowl.
  4. Cream the butter and sugar in a large bowl until light and fluffy.
  5. Incorporate the eggs one at a time, mixing well after each addition, then stir in the vanilla.

  8. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. Cool the cakes in the pans for 10 minutes, then transfer to wire racks.
  10. Make the frosting by beating together cream cheese and butter, then gradually add powdered sugar and vanilla.
  11. Assemble the cake by spreading frosting between the layers and on the top and sides.
  12. Slice and serve with your favorite beverages.

Notes

Feel free to substitute buttermilk with regular milk or add vinegar to whole milk. For a fun twist, mix in nuts or raisins.
