  • For the Noodles:
    • 8 ounces egg noodles
    • 4 tablespoons unsalted butter
    • 3 cloves garlic, minced
    • 1 cup chicken broth
    • 1/2 cup heavy cream
    • 1/2 cup grated Parmesan cheese
    • 1 tablespoon fresh parsley, chopped

Instructions

  1. Season the chicken thighs with salt and pepper on both sides.
  2. In a large skillet, heat olive oil over medium-high heat. Add the chicken thighs, skin-side down, and cook for 7-8 minutes until golden brown.
  3. Flip the chicken and cook for an additional 5-6 minutes until cooked through (internal temperature should reach 165°F).
  4. Remove the chicken from the skillet and set aside. In the same skillet, add the minced garlic and sauté for 1 minute until fragrant.
  5. Add the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan.
  6. Stir in the egg noodles and cook according to package instructions, about 7-9 minutes, until al dente.
  7. Reduce heat to low, then stir in the heavy cream and Parmesan cheese until melted and creamy.
  8. Add the cooked chicken back to the skillet, spooning the sauce over the top, and garnish with fresh parsley before serving.
