Ingredients

Scale
  • For the Soup:
    • 1 lb beef sirloin, thinly sliced
    • 4 slices of bacon, chopped
    • 1 medium onion, diced
    • 1 red bell pepper, diced
    • 1 green bell pepper, diced
    • 3 cloves garlic, minced
    • 4 cups beef broth
    • 1 cup heavy cream
    • 2 cups shredded provolone cheese
    • 1 tablespoon Worcestershire sauce
    • Salt and pepper to taste
  • For the Cheesy Toast:
    • 4 slices of crusty bread
    • 1 cup shredded mozzarella cheese
    • 2 tablespoons butter, softened

Instructions

  1. In a large pot, cook the chopped bacon over medium heat until crispy, about 5-7 minutes. Remove and set aside, leaving the drippings in the pot.
  2. Add the diced onion and bell peppers to the pot and sauté for 5 minutes until softened.
  3. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  4. Add the sliced beef sirloin to the pot, cooking until browned, about 3-4 minutes.
  5. Pour in the beef broth and Worcestershire sauce, bringing the mixture to a simmer.
  6. Reduce heat to low and stir in the heavy cream and provolone cheese until melted and creamy, about 3-5 minutes.
  7. Season with salt and pepper to taste, then stir in the crispy bacon.
  8. For the cheesy toast, preheat the oven to 400°F (200°C). Spread butter on each slice of bread, top with mozzarella cheese, and bake for 8-10 minutes until golden and bubbly.
