- 1 cup orzo pasta
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- Salt and pepper to taste

Instructions
- Cook the orzo. Begin by bringing 2 cups of water to a boil in a large pot, then add the orzo. Cook according to the package instructions—usually about 8-10 minutes—until al dente. Once done, drain and rinse under cold water to halt the cooking process.
- Combine the salad ingredients. In a large mixing bowl, add the cooled orzo along with the halved cherry tomatoes, diced cucumber, bell pepper, finely chopped red onion, and crumbled feta cheese.
- Prepare the dressing. In a separate bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper.
- Dress the salad. Pour the dressing over the salad mix and gently toss to combine.
- Garnish and chill. Sprinkle with fresh herbs of your choice for that final touch, cover the bowl and chill in the refrigerator for at least 30 minutes before serving.
