  • Egg Mixture:
    • 12 large eggs
    • 2 cups whole milk
    • 1 cup heavy cream
    • 1 tsp Dijon mustard
    • 1/2 tsp salt
    • 1/4 tsp black pepper
  • Hollandaise Sauce:
    • 1 cup unsalted butter
    • 3 large egg yolks
    • 1 tbsp lemon juice
    • 1/4 tsp cayenne pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a greased 9×13 inch baking dish, layer the croissant pieces and diced Canadian bacon evenly.
  3. In a large bowl, whisk together the eggs, milk, cream, Dijon mustard, salt, and pepper until well combined.
  4. Pour the egg mixture over the croissant and bacon layers, ensuring everything is soaked.
  5. Cover the dish with plastic wrap and refrigerate overnight.
  6. The next morning, remove the plastic wrap and bake for 45-50 minutes, or until the top is golden brown and the center is set.
  7. While the casserole is baking, prepare the hollandaise sauce by melting the butter in a saucepan over low heat.
  8. In a separate bowl, whisk the egg yolks, lemon juice, and cayenne pepper until thick and pale. Gradually whisk in the melted butter until smooth.
