- 4 thin chicken cutlets
- ½ cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs
- ½ cup grated Parmesan cheese
- 2 tbsp olive oil
- 2 tbsp butter
- 3 garlic cloves, minced
- ½ cup chicken broth
- 1 cup heavy cream
- ¼ cup grated Parmesan (for sauce)
- Salt & pepper to taste
- Fresh parsley or thyme for garnish
Instructions
- Prepare chicken: Sprinkle both sides of each chicken cutlet with salt and pepper.
- Coat cutlets: Dredge each cutlet in flour, dip it into the beaten eggs, and finally coat it in the breadcrumb-Parmesan mixture.
- Pan-Fry: Heat olive oil in your skillet over medium heat and cook the cutlets for 3–4 minutes per side until golden brown.
- Make the sauce: In the same skillet, melt butter, add minced garlic, and sauté until fragrant. Pour in chicken broth, simmer, then add heavy cream and grated Parmesan, stirring until thickened.
- Combine: Nestle the chicken back into the skillet with the sauce, garnishing with fresh herbs.
- Serve: Enjoy alongside creamy mashed potatoes, pasta, or roasted vegetables with extra sauce drizzled on top.
