Ingredients

  • 4 thin chicken cutlets
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 garlic cloves, minced
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ¼ cup grated Parmesan (for sauce)
  • Salt & pepper to taste
  • Fresh parsley or thyme for garnish

Instructions

  1. Prepare chicken: Sprinkle both sides of each chicken cutlet with salt and pepper.
  2. Coat cutlets: Dredge each cutlet in flour, dip it into the beaten eggs, and finally coat it in the breadcrumb-Parmesan mixture.
  3. Pan-Fry: Heat olive oil in your skillet over medium heat and cook the cutlets for 3–4 minutes per side until golden brown.
  4. Make the sauce: In the same skillet, melt butter, add minced garlic, and sauté until fragrant. Pour in chicken broth, simmer, then add heavy cream and grated Parmesan, stirring until thickened.
  5. Combine: Nestle the chicken back into the skillet with the sauce, garnishing with fresh herbs.
  6. Serve: Enjoy alongside creamy mashed potatoes, pasta, or roasted vegetables with extra sauce drizzled on top.
