These pastel sugar cookie sandwiches are a delightful treat that combines the soft, buttery texture of freshly baked cookies with a creamy, sweet filling. Each bite offers a burst of flavor, enhanced by the vibrant colors that make them perfect for Easter celebrations.

Ingredients

Scale
  • For the Cookies:
    • 2 3/4 cups all-purpose flour
    • 1 teaspoon baking soda
    • 1/2 teaspoon baking powder
    • 1 cup unsalted butter, softened
    • 1 1/2 cups white sugar
    • 1 egg
    • 1 teaspoon vanilla extract
    • 1/2 teaspoon almond extract
    • 1/4 teaspoon salt
  • For the Filling:
    • 1 cup unsalted butter, softened
    • 4 cups powdered sugar
    • 2 tablespoons heavy cream
    • 1 teaspoon vanilla extract
    • Food coloring (pastel colors)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix together the flour, baking soda, baking powder, and salt; set aside.
  3. In a large bowl, cream together the butter and sugar until smooth and fluffy.
  4. Beat in the egg, vanilla extract, and almond extract until well combined.
  5. Gradually blend in the dry ingredients until just combined.
  6. Drop rounded tablespoons of dough onto ungreased baking sheets, spacing them about 2 inches apart.
  7. Bake for 8 to 10 minutes, or until the edges are lightly golden. Remove from the oven and let cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.
  8. For the filling, beat together the softened butter, powdered sugar, heavy cream, and vanilla extract until smooth. Divide the mixture into separate bowls and add food coloring to achieve desired pastel shades.
  9. Once the cookies are cool, spread a generous amount of filling on the flat side of one cookie and top with another cookie, flat side down. Press gently to adhere.
