- 1 cup milk
- 2 large eggs
- 2 teaspoons baking powder

- 2 cups fresh peaches, diced
- 1/2 cup brown sugar
- 1/4 cup rolled oats
- 1/4 cup butter, melted
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- Cream together the softened butter and sugar using an electric mixer until light and fluffy.
- Beat in the eggs, one at a time, followed by the milk.
- Combine the flour, baking powder, baking soda, cinnamon, and salt in another bowl.
- Add the dry mixture to the wet ingredients, mixing gently until just combined.
- Fold in the diced peaches using a rubber spatula.
- Pour the batter into the prepared baking dish, spreading it evenly.
- Mix brown sugar, oats, cinnamon, and melted butter in a small bowl until crumbly.
- Sprinkle the streusel topping evenly over the batter.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Allow to cool for a few minutes, then slice and serve warm.
Notes
Add nuts for extra crunch or swap in other fruits like cherries or blueberries. Can be made ahead and stored in the fridge.
