Description

A refreshing cold soup made with ripe peaches, cucumber, and fresh herbs, perfect for hot summer days.


Ingredients

  • 4 ripe peaches, peeled and pitted
  • 1 cucumber, peeled and diced
  • 1/4 cup red onion, chopped
  • 2 cups vegetable broth
  • 1/4 cup fresh basil leaves
  • 1/4 cup fresh mint leaves
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a blender, combine the peaches, cucumber, red onion, and vegetable broth.
  2. Blend until smooth.
  3. Add the basil, mint, olive oil, salt, and pepper, and blend again until well combined.
  4. Chill the gazpacho in the refrigerator for at least 1 hour before serving.
  5. Serve cold, garnished with additional herbs if desired.

Notes

  • For a spicier version, add a jalapeño pepper to the blender.
  • This soup can be made a day in advance for better flavor.
