A refreshing cold soup made with ripe peaches, cucumber, and fresh herbs, perfect for hot summer days.
Ingredients

- 4 ripe peaches, peeled and pitted
- 1 cucumber, peeled and diced
- 1/4 cup red onion, chopped
- 2 cups vegetable broth
- 1/4 cup fresh basil leaves
- 1/4 cup fresh mint leaves
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a blender, combine the peaches, cucumber, red onion, and vegetable broth.
- Blend until smooth.
- Add the basil, mint, olive oil, salt, and pepper, and blend again until well combined.
- Chill the gazpacho in the refrigerator for at least 1 hour before serving.
- Serve cold, garnished with additional herbs if desired.
Notes
- For a spicier version, add a jalapeño pepper to the blender.
- This soup can be made a day in advance for better flavor.
- Serve with crusty bread for a complete meal.
