Description

A delicious and healthy dish featuring salmon glazed with a sweet peach sauce, served with fresh snap peas and dill.


Ingredients

  • 4 salmon fillets
  • 1 cup peach preserves
  • 2 cups snap peas
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small saucepan, heat the peach preserves over medium heat until melted.
  3. Place the salmon fillets on a baking sheet lined with parchment paper.
  4. Brush the melted peach preserves over the salmon fillets.
  5. Season with salt and pepper.
  6. Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through.
  7. While the salmon is baking, heat olive oil in a skillet over medium heat.
  8. Add snap peas and sauté for 3-4 minutes until tender-crisp.
  9. Stir in the fresh dill and cook for an additional minute.
  10. Serve the salmon with snap peas on the side, garnished with extra dill if desired.

Notes

  • For a spicier kick, add a pinch of red pepper flakes to the peach glaze.
  • Make sure to use fresh dill for the best flavor.
