- 4 salmon fillets
- 1 cup peach preserves
- 2 cups snap peas
- 2 tablespoons fresh dill, chopped
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a small saucepan, heat the peach preserves over medium heat until melted.
- Place the salmon fillets on a baking sheet lined with parchment paper.
- Brush the melted peach preserves over the salmon fillets.
- Season with salt and pepper.
- Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through.
- While the salmon is baking, heat olive oil in a skillet over medium heat.
- Add snap peas and sauté for 3-4 minutes until tender-crisp.
- Stir in the fresh dill and cook for an additional minute.
- Serve the salmon with snap peas on the side, garnished with extra dill if desired.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the peach glaze.
- Make sure to use fresh dill for the best flavor.
