Delicious grilled chicken skewers marinated in a flavorful peach and herb mixture, perfect for summer barbecues.
Ingredients

- 1 lb chicken breast, cut into cubes
- 2 ripe peaches, pitted and diced
- 1/4 cup olive oil
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Skewers (wooden or metal)
Instructions
- In a bowl, combine diced peaches, olive oil, rosemary, thyme, garlic, salt, and pepper.
- Add chicken cubes to the marinade and mix well. Cover and refrigerate for at least 1 hour.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken and peach pieces onto skewers alternately.
- Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Remove from the grill and let rest for a few minutes before serving.
Notes
- Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
- Feel free to add other vegetables like bell peppers or onions to the skewers.
- Serve with a side of rice or salad for a complete meal.
