Description

Delicious grilled chicken skewers marinated in a flavorful peach and herb mixture, perfect for summer barbecues.


Ingredients

  • 1 lb chicken breast, cut into cubes
  • 2 ripe peaches, pitted and diced
  • 1/4 cup olive oil
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Skewers (wooden or metal)

Instructions

  1. In a bowl, combine diced peaches, olive oil, rosemary, thyme, garlic, salt, and pepper.
  2. Add chicken cubes to the marinade and mix well. Cover and refrigerate for at least 1 hour.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated chicken and peach pieces onto skewers alternately.
  5. Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  6. Remove from the grill and let rest for a few minutes before serving.

Notes

  • Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
  • Feel free to add other vegetables like bell peppers or onions to the skewers.
  • Serve with a side of rice or salad for a complete meal.
