Deliciously rich and creamy Peanut Butter Sandwich Bars with a chewy oat crust and chocolate topping, perfect for any occasion.
Ingredients

- 1 cup peanut butter
- 1/2 cup honey or maple syrup
- 2 cups oats
- 1/2 cup chocolate chips
- 1/4 cup coconut oil
- 1/4 cup powdered sugar (optional)
Instructions
- In a mixing bowl, combine 1 cup of peanut butter and 1/2 cup of honey until smooth and well-blended.
- Add 2 cups of oats to the mixture and stir well until every oat is coated.
- Press the mixture firmly into a lined square baking dish.
- In a small saucepan over low heat, melt 1/2 cup of chocolate chips and 1/4 cup of coconut oil until smooth.
- Pour the chocolate mixture over the peanut butter layer and spread evenly.
- If desired, sprinkle powdered sugar on top before refrigerating.
- Refrigerate your bars for about 60 minutes until set.
- After chilling, remove the bars and cut them into squares.
Notes
For best results, refrigerate a day in advance to enhance the flavor. Customize with toppings or mix-ins as desired.
