These Pecan Pie Cheesecake Layer Bars offer a delightful contrast of creamy cheesecake and crunchy pecan pie topping. The buttery crust adds a rich texture, while the sweet and nutty flavors create a heavenly dessert experience that melts in your mouth.

Ingredients

Scale
  • For the crust:
    • 1 ½ cups graham cracker crumbs
    • ½ cup unsalted butter, melted
    • ¼ cup granulated sugar
  • For the cheesecake layer:
    • 16 oz cream cheese, softened
    • ½ cup granulated sugar
    • 2 large eggs
    • 1 tsp vanilla extract
  • For the pecan pie topping:
    • 1 cup pecans, chopped
    • ½ cup light corn syrup
    • ½ cup brown sugar
    • 2 large eggs
    • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of a greased 9×13 inch baking dish.
  3. Bake the crust for 10 minutes until lightly golden. Remove from the oven and let cool.
  4. In another bowl, beat the cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition, then stir in vanilla.
  5. Spread the cheesecake mixture over the cooled crust evenly.
  6. In a separate bowl, mix together chopped pecans, corn syrup, brown sugar, eggs, and vanilla until well combined.
  7. Pour the pecan mixture over the cheesecake layer, spreading it evenly.
  8. Bake for an additional 30-35 minutes, or until the topping is set and slightly bubbly. The edges should be golden brown.
  9. Allow to cool completely before slicing into bars.
