Description
Pecan Pie Cookies are a delightful fusion of crispy edges and a creamy, nutty center that melts in your mouth. Each bite offers a rich, buttery flavor with the sweet crunch of toasted pecans, reminiscent of a classic pecan pie but in a convenient cookie form.
Ingredients
Scale
- For the Cookie Dough:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- For the Pecan Filling:
- 1 cup pecans, chopped
- 1/2 cup corn syrup
- 1/4 cup brown sugar, packed
- 1/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
- In another bowl, combine the chopped pecans, corn syrup, brown sugar, granulated sugar, eggs, and vanilla extract to make the filling.
- Using a cookie scoop, drop tablespoon-sized balls of cookie dough onto a lined baking sheet, leaving space between each.
- Make a small indentation in the center of each cookie and fill it with the pecan filling.
- Bake for 12-15 minutes or until the edges are golden brown and the filling is set. The cookies should look slightly puffed and firm to the touch.
- Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Make-ahead: The cookie dough can be prepared and refrigerated for up to 3 days before baking.
- Storage: Store cookies in an airtight container at room temperature for up to 5 days.
- Substitutions: Use maple syrup instead of corn syrup for a different flavor profile.
