  • For the Pecan Filling:
    • 1 cup pecans, chopped
    • 1/2 cup corn syrup
    • 1/4 cup brown sugar, packed
    • 1/4 cup granulated sugar
    • 2 large eggs
    • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
  5. In another bowl, combine the chopped pecans, corn syrup, brown sugar, granulated sugar, eggs, and vanilla extract to make the filling.
  6. Using a cookie scoop, drop tablespoon-sized balls of cookie dough onto a lined baking sheet, leaving space between each.
  7. Make a small indentation in the center of each cookie and fill it with the pecan filling.
  8. Bake for 12-15 minutes or until the edges are golden brown and the filling is set. The cookies should look slightly puffed and firm to the touch.
  9. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
