- 2 ¼ teaspoons active dry yeast (1 standard 0.25-ounce packet)
- 2 teaspoons granulated sugar
- 1 cup whole milk (warmed)
- ½ cup unsalted butter (melted and divided)
- 1 large egg (at room temperature)
- ½ cup mashed potatoes (smooth)
- 1 teaspoon salt
- 3 ½ cups all-purpose flour
Instructions
- Proof the yeast: In the bowl of your stand mixer, combine the yeast, sugar, and warm milk. Wait about 5 minutes until the mix is frothy and bubbly.
- Add half of the melted butter and the egg to the yeast mixture, beating on medium-high speed. Gently fold in the mashed potatoes.
- Gradually add the salt, then introduce flour one cup at a time while mixing until a ball forms.
- Switch to the dough hook and knead for 10 minutes until a round ball forms.
- Lightly grease a bowl, place the dough inside, cover it, and let it rise in a warm area for about 1 hour, or until doubled in size.
- Punch down the dough gently, roll it out into a rectangle, and slice it into 12 pieces.
- Roll each piece into a ball and place them in a greased 9×13-inch baking dish. Cover and let rise for another hour.
- Preheat your oven to 350°F and bake the rolls uncovered for about 30 minutes until golden brown.
- Brush the tops with remaining melted butter once out of the oven.
Notes
Make-ahead by preparing the rolls to the second rise, then refrigerate overnight. Optionally, experiment with adding fresh herbs or cheese to the dough.
