  • Rice: 2 cups, cooked and cooled (preferably day-old)
  • Vegetables:
    • 1 cup peas
    • 1 cup carrots, diced
    • 1 bell pepper, diced
  • Aromatics:
    • 3 cloves garlic, minced
    • 1 onion, finely chopped
  • Seasoning:
    • 3 tablespoons soy sauce
    • 1 tablespoon oyster sauce
    • 1 teaspoon sesame oil
  • Garnish:
    • 2 green onions, chopped
    • 1 tablespoon sesame seeds

Instructions

  1. Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat.
  2. Add the chopped onion and minced garlic, sautéing until fragrant and translucent, about 2-3 minutes.
  3. Increase the heat to high and add the prawns, cooking until they turn pink, approximately 3-4 minutes.
  4. Stir in the diced carrots and bell pepper, cooking for another 2 minutes until slightly tender.
  5. Add the cooked rice, breaking up any clumps, and stir-fry for 3-4 minutes until heated through.
  6. Pour in the soy sauce, oyster sauce, and sesame oil, mixing well to ensure even coating.
  7. Fold in the peas and cook for an additional 2 minutes.
  8. Remove from heat and garnish with chopped green onions and sesame seeds before serving.
