- 2 boneless, skinless chicken breasts
- 1 cup cooked quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- For Tzatziki: 1 cup Greek yogurt, 1/2 cucumber grated, 1 clove garlic minced, 1 tablespoon lemon juice, salt to taste
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, mix olive oil, oregano, salt, and pepper. Coat the chicken breasts with the mixture.
- Grill the chicken for 6-7 minutes on each side or until fully cooked.
- While the chicken is grilling, prepare the tzatziki by combining Greek yogurt, grated cucumber, minced garlic, lemon juice, and salt in a bowl.
- Once the chicken is cooked, let it rest for a few minutes before slicing it.
- In a bowl, layer the quinoa, grilled chicken, cherry tomatoes, cucumber, red onion, and feta cheese.
- Drizzle with tzatziki sauce before serving.

- Feel free to add more vegetables like bell peppers or spinach.
