Ingredients

- 2 cups all-purpose flour
- 1/2 cup unsalted butter, chilled and diced
- 1/4 cup sugar
- 1/2 teaspoon salt
- 1/4 cup cold water
- 1 cup pumpkin puree
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 cup brown sugar
- 1 egg, beaten (for egg wash)
Instructions
- In a bowl, mix flour, sugar, and salt.
- Add diced butter and mix until crumbly.
- Stir in cold water until the dough forms.
- Wrap the dough in plastic and refrigerate for 30 minutes.
- In another bowl, combine pumpkin puree, cinnamon, nutmeg, and brown sugar.
- Preheat the oven to 375°F (190°C).
- Roll out the dough and cut into circles.
- Place a spoonful of the pumpkin mixture on each circle.
- Fold the dough over and seal the edges with a fork.
- Brush the tops with beaten egg.
- Bake for 25-30 minutes or until golden brown.
Notes
- For a sweeter filling, add more sugar to the pumpkin mixture.
- These empanadas can be frozen before baking.
- Serve warm with a dusting of powdered sugar.
