Description

Pumpkin Empanadas are a delightful fall treat filled with a sweet pumpkin mixture, perfect for any autumn gathering.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and diced
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1/4 cup cold water
  • 1 cup pumpkin puree
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup brown sugar
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a bowl, mix flour, sugar, and salt.
  2. Add diced butter and mix until crumbly.
  3. Stir in cold water until the dough forms.
  4. Wrap the dough in plastic and refrigerate for 30 minutes.
  5. In another bowl, combine pumpkin puree, cinnamon, nutmeg, and brown sugar.
  6. Preheat the oven to 375°F (190°C).
  7. Roll out the dough and cut into circles.
  8. Place a spoonful of the pumpkin mixture on each circle.
  9. Fold the dough over and seal the edges with a fork.
  10. Brush the tops with beaten egg.
  11. Bake for 25-30 minutes or until golden brown.

Notes

  • For a sweeter filling, add more sugar to the pumpkin mixture.
  • These empanadas can be frozen before baking.
  • Serve warm with a dusting of powdered sugar.
