Ingredients

  • 1 lb flank steak
  • 2 cups cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Season the flank steak with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Cook the steak for about 4-5 minutes on each side for medium-rare.
  4. Remove the steak from the skillet and let it rest for a few minutes.
  5. Slice the steak thinly against the grain.
  6. In a bowl, combine cooked quinoa, cherry tomatoes, cucumber, red onion, feta cheese, and olives.
  7. Drizzle with lemon juice and toss to combine.
  8. Top the quinoa mixture with sliced steak and serve immediately.
