Ingredients

Scale
  • Dough:
    • 2 1/4 cups all-purpose flour
    • 1/4 cup cocoa powder
    • 1/2 cup granulated sugar
    • 1 packet (2 1/4 tsp) active dry yeast
    • 1/2 tsp salt
    • 1/2 cup whole milk, warmed
    • 1/4 cup unsalted butter, melted
    • 1 large egg
    • 1 tbsp red food coloring
  • Filling:
    • 1/2 cup brown sugar, packed
    • 1 tbsp ground cinnamon
    • 1/4 cup unsalted butter, softened
  • Frosting:
    • 8 oz cream cheese, softened
    • 1/4 cup unsalted butter, softened
    • 2 cups powdered sugar
    • 1 tsp vanilla extract

Instructions

  1. In a large bowl, combine warm milk, sugar, and yeast. Let it sit for 5 minutes until frothy.
  2. Add melted butter, egg, red food coloring, cocoa powder, and salt to the yeast mixture. Mix well.
  3. Gradually add flour, mixing until a soft dough forms. Knead for about 5 minutes until smooth.
  4. Cover the dough with a damp cloth and let it rise in a warm place for 1 hour or until doubled in size.
  5. Preheat the oven to 350°F (175°C).
  6. Roll out the dough on a floured surface into a rectangle (about 12×18 inches).
  7. Spread softened butter over the dough, then sprinkle with brown sugar and cinnamon.
  8. Roll the dough tightly and cut into 12 equal pieces. Place in a greased baking dish.
  9. Let the rolls rise for another 30 minutes.
  10. Bake for 20-25 minutes until golden brown. Let cool slightly.
  11. For the frosting, beat cream cheese and butter until smooth, then add powdered sugar and vanilla. Spread over warm rolls.

Notes

  • Make-ahead: Prepare the rolls up to the second rise, cover tightly, and refrigerate overnight. Allow to come to room temperature before baking.
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days.
  • Substitutions: Use almond milk for a dairy-free option or coconut oil instead of butter for a vegan version.
