- Cake:
- 1 ¾ cups all-purpose flour
- 1 ½ cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons baking soda

- 2 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- Moist Filling:
- 1 cup heavy cream
- 8 ounces semi-sweet chocolate, chopped
- 2 tablespoons powdered sugar
- Frosting:
- 1 cup unsalted butter, softened
- 3 ½ cups powdered sugar
- ½ cup unsweetened cocoa powder
- ½ cup heavy cream
- 2 teaspoons vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour two 9-inch round cake pans.
- In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add eggs, milk, oil, and vanilla to the dry ingredients and mix on medium speed for 2 minutes.
- Stir in boiling water until the batter is smooth (it will be thin).
- Pour the batter evenly into the prepared pans.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then remove from pans and cool completely on wire racks.
- For the filling, heat the heavy cream until just boiling, then pour over the chopped chocolate. Let sit for 5 minutes, then stir until smooth. Add powdered sugar and mix well.
- Once the cakes are cool, slice each cake in half horizontally to create four layers.
- Spread the chocolate filling between the layers, then frost the top and sides of the cake with the chocolate frosting.
Notes
- This cake can be made a day in advance; store it in an airtight container at room temperature.
- Leftover cake can be stored in the refrigerator for up to 5 days.
- For a lighter version, substitute half of the all-purpose flour with almond flour.
