    • 1 ¾ cups all-purpose flour

    • ¾ cup unsweetened cocoa powder

    • 2 large eggs
    • 1 cup whole milk
    • ½ cup vegetable oil
    • 2 teaspoons vanilla extract
    • 1 cup boiling water
  • Moist Filling:
    • 1 cup heavy cream
    • 8 ounces semi-sweet chocolate, chopped
    • 2 tablespoons powdered sugar
  • Frosting:
    • 1 cup unsalted butter, softened
    • 3 ½ cups powdered sugar
    • ½ cup unsweetened cocoa powder
    • ½ cup heavy cream
    • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  4. Add eggs, milk, oil, and vanilla to the dry ingredients and mix on medium speed for 2 minutes.
  5. Stir in boiling water until the batter is smooth (it will be thin).
  6. Pour the batter evenly into the prepared pans.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the cakes cool in the pans for 10 minutes, then remove from pans and cool completely on wire racks.
  9. For the filling, heat the heavy cream until just boiling, then pour over the chopped chocolate. Let sit for 5 minutes, then stir until smooth. Add powdered sugar and mix well.
  10. Once the cakes are cool, slice each cake in half horizontally to create four layers.
  11. Spread the chocolate filling between the layers, then frost the top and sides of the cake with the chocolate frosting.
