Description

Deliciously rich and moist muffins that combine the sweetness of bananas with zesty citrus flavors and creamy ricotta.


Ingredients

  • 1 cup ricotta cheese
  • 2 ripe bananas, mashed
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon lemon zest
  • 1 teaspoon orange zest
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine the ricotta cheese, mashed bananas, sugar, vegetable oil, eggs, and vanilla extract in a large bowl. Whisk until smooth.
  3. Whisk together the baking powder, baking soda, salt, lemon zest, orange zest, and flour in another bowl.
  4. Add the dry mixture to the wet mixture, stirring gently until just combined.
  5. Fill muffin cups about 3/4 full with batter.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let the muffins cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

You can prepare the batter the night before and refrigerate it. Customize by adding nuts or chocolate chips.
