Ingredients

- 1 cup ricotta cheese
- 2 ripe bananas, mashed
- 1/2 cup sugar
- 1/4 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon lemon zest
- 1 teaspoon orange zest
- 1 1/2 cups all-purpose flour
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Combine the ricotta cheese, mashed bananas, sugar, vegetable oil, eggs, and vanilla extract in a large bowl. Whisk until smooth.
- Whisk together the baking powder, baking soda, salt, lemon zest, orange zest, and flour in another bowl.
- Add the dry mixture to the wet mixture, stirring gently until just combined.
- Fill muffin cups about 3/4 full with batter.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let the muffins cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
You can prepare the batter the night before and refrigerate it. Customize by adding nuts or chocolate chips.
