Description

A deliciously sweet and savory dish featuring roasted acorn squash drizzled with a rich brown sugar butter.


Ingredients

  • 2 acorn squashes
  • 4 tablespoons unsalted butter
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • Salt to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the acorn squashes in half and scoop out the seeds.
  3. In a small saucepan, melt the butter over low heat.
  4. Add the brown sugar, cinnamon, and salt to the melted butter, stirring until combined.
  5. Brush the brown sugar butter mixture over the cut sides of the acorn squashes.
  6. Place the squashes cut side down on a baking sheet.
  7. Roast in the preheated oven for 25-30 minutes, or until tender.
  8. Serve warm, drizzled with any remaining brown sugar butter.

Notes

  • For a nutty flavor, add chopped pecans or walnuts on top before serving.
  • Adjust the sweetness by adding more or less brown sugar according to your taste.
