- 2 acorn squashes
- 4 tablespoons unsalted butter
- 1/4 cup brown sugar
- 1 teaspoon cinnamon
- Salt to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the acorn squashes in half and scoop out the seeds.
- In a small saucepan, melt the butter over low heat.
- Add the brown sugar, cinnamon, and salt to the melted butter, stirring until combined.
- Brush the brown sugar butter mixture over the cut sides of the acorn squashes.
- Place the squashes cut side down on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until tender.
- Serve warm, drizzled with any remaining brown sugar butter.
Notes
- For a nutty flavor, add chopped pecans or walnuts on top before serving.
- Adjust the sweetness by adding more or less brown sugar according to your taste.
