Ingredients

  • 2 ripe peaches, sliced
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste
  • 4 cups mixed greens
  • 1/4 cup feta cheese, crumbled (optional)
  • 1/4 cup walnuts, toasted (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the trimmed asparagus on a baking sheet and drizzle with olive oil, salt, and pepper.
  3. Roast the asparagus in the oven for 15-20 minutes until tender.
  4. In a large bowl, combine the mixed greens, sliced peaches, and roasted asparagus.
  5. Drizzle with balsamic vinegar and toss gently to combine.
  6. Top with feta cheese and walnuts if desired.
