- 1 lb asparagus, trimmed
- 2 ripe peaches, sliced
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar

- 4 cups mixed greens
- 1/4 cup feta cheese, crumbled (optional)
- 1/4 cup walnuts, toasted (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Place the trimmed asparagus on a baking sheet and drizzle with olive oil, salt, and pepper.
- Roast the asparagus in the oven for 15-20 minutes until tender.
- In a large bowl, combine the mixed greens, sliced peaches, and roasted asparagus.
- Drizzle with balsamic vinegar and toss gently to combine.
- Top with feta cheese and walnuts if desired.
