A refreshing summer dessert featuring roasted peaches topped with a sweet basil syrup and creamy ice cream.

- 4 ripe peaches, halved and pitted
- 2 tablespoons olive oil
- 1/4 cup brown sugar
- 1/2 cup fresh basil leaves
- 1 cup water
- 4 scoops vanilla ice cream
Instructions
- Preheat the oven to 400°F (200°C).
- Place the peach halves on a baking sheet and drizzle with olive oil.
- Sprinkle brown sugar over the peaches.
- Roast in the oven for 20-25 minutes until tender and caramelized.
- While the peaches are roasting, prepare the basil syrup by combining basil leaves and water in a saucepan.
- Bring to a boil, then reduce heat and simmer for 10 minutes.
- Strain the syrup to remove basil leaves and let it cool.
- To serve, place roasted peaches in bowls, add a scoop of vanilla ice cream, and drizzle with basil syrup.
Notes
- For a vegan option, substitute the ice cream with a dairy-free alternative.
- Adjust the sweetness of the syrup according to your taste.
- Fresh basil can be replaced with mint for a different flavor.
