Description

A refreshing summer dessert featuring roasted peaches topped with a sweet basil syrup and creamy ice cream.


Ingredients

  • 4 ripe peaches, halved and pitted
  • 2 tablespoons olive oil
  • 1/4 cup brown sugar
  • 1/2 cup fresh basil leaves
  • 1 cup water
  • 4 scoops vanilla ice cream

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the peach halves on a baking sheet and drizzle with olive oil.
  3. Sprinkle brown sugar over the peaches.
  4. Roast in the oven for 20-25 minutes until tender and caramelized.
  5. While the peaches are roasting, prepare the basil syrup by combining basil leaves and water in a saucepan.
  6. Bring to a boil, then reduce heat and simmer for 10 minutes.
  7. Strain the syrup to remove basil leaves and let it cool.
  8. To serve, place roasted peaches in bowls, add a scoop of vanilla ice cream, and drizzle with basil syrup.
