Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, combine the strawberries, honey, balsamic vinegar, and vanilla extract. Toss until well coated.
- Spread the strawberries on a baking sheet and roast for 20-25 minutes, or until they are soft and caramelized, stirring halfway through.
- While the strawberries are roasting, prepare the whipped ricotta by blending the ricotta cheese, heavy cream, honey, and vanilla extract in a food processor until smooth and creamy.
