Ingredients

Scale
  • For the Roasted Strawberries:
    • 2 cups fresh strawberries, hulled and halved
    • 2 tablespoons honey
    • 1 tablespoon balsamic vinegar
    • 1 teaspoon vanilla extract
  • For the Whipped Ricotta:
    • 1 cup ricotta cheese
    • 2 tablespoons heavy cream
    • 1 tablespoon honey
    • 1/2 teaspoon vanilla extract
  • For the Toast:
    • 4 slices of rustic bread (such as sourdough or ciabatta)
    • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine the strawberries, honey, balsamic vinegar, and vanilla extract. Toss until well coated.
  3. Spread the strawberries on a baking sheet and roast for 20-25 minutes, or until they are soft and caramelized, stirring halfway through.
  4. While the strawberries are roasting, prepare the whipped ricotta by blending the ricotta cheese, heavy cream, honey, and vanilla extract in a food processor until smooth and creamy.
  5. Brush the slices of bread with olive oil and toast them in the oven for about 10 minutes, or until golden brown and crispy.
  6. Once the strawberries are done, remove them from the oven and let them cool slightly.
  7. Spread a generous layer of whipped ricotta on each slice of toast, then top with the roasted strawberries.
  8. Serve immediately and enjoy!

Notes

  • This dish can be made ahead by preparing the roasted strawberries and whipped ricotta in advance; store them in airtight containers in the refrigerator for up to 3 days.
  • For a vegan option, substitute ricotta with a plant-based ricotta and use maple syrup instead of honey.
  • Leftover roasted strawberries can be used as a topping for pancakes or yogurt.
