Description

A delicious and colorful mix of roasted vegetables that brings out their natural sweetness and flavor.


Ingredients

  • 2 cups of broccoli florets
  • 2 cups of bell peppers, chopped
  • 1 cup of carrots, sliced
  • 1 cup of zucchini, sliced
  • 1 cup of cherry tomatoes
  • 3 tablespoons of olive oil
  • 1 teaspoon of garlic powder
  • 1 teaspoon of dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine all the vegetables.
  3. Drizzle with olive oil and sprinkle with garlic powder, oregano, salt, and pepper.
  4. Toss until the vegetables are evenly coated.
  5. Spread the vegetables in a single layer on a baking sheet.
  6. Roast in the preheated oven for 25-30 minutes, stirring halfway through.
  7. Remove from the oven and serve warm.
