Ingredients

- 2 cups of broccoli florets
- 2 cups of bell peppers, chopped
- 1 cup of carrots, sliced
- 1 cup of zucchini, sliced
- 1 cup of cherry tomatoes
- 3 tablespoons of olive oil
- 1 teaspoon of garlic powder
- 1 teaspoon of dried oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, combine all the vegetables.
- Drizzle with olive oil and sprinkle with garlic powder, oregano, salt, and pepper.
- Toss until the vegetables are evenly coated.
- Spread the vegetables in a single layer on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, stirring halfway through.
- Remove from the oven and serve warm.

- For extra flavor, add a sprinkle of parmesan cheese before serving.
