Instructions
- In a large bowl, combine the diced salmon, breadcrumbs, green onions, mayonnaise, beaten egg, Dijon mustard, garlic powder, salt, and pepper. Mix until well combined.
- Form the mixture into small balls, about 1 inch in diameter.
- Heat olive oil in a skillet over medium heat. Once hot, add the salmon balls in batches, ensuring not to overcrowd the pan.
- Cook for 4-5 minutes on each side, or until golden brown and cooked through. They should be firm to the touch.
- While the salmon balls are cooking, prepare the avocado sauce by blending the avocado, lime juice, Greek yogurt, minced garlic, salt, and pepper until smooth.
- Once the salmon balls are cooked, remove them from the skillet and drain on paper towels.
- Serve warm with the avocado sauce drizzled on top or on the side for dipping.
