  • For the Cookie Base:
    • 1 cup unsalted butter, softened
    • 1 cup granulated sugar
    • 1 cup brown sugar, packed
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 3 cups all-purpose flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon salt
  • For the Salted Caramel:
    • 1 cup granulated sugar
    • 6 tablespoons unsalted butter
    • 1/2 cup heavy cream
    • 1 teaspoon sea salt
  • For the Chocolate Drizzle:
    • 1 cup semi-sweet chocolate chips
    • 1 tablespoon coconut oil

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Spread half of the cookie dough evenly in the prepared baking pan.
  6. In a saucepan over medium heat, combine the granulated sugar for the caramel. Stir constantly until it melts and turns a deep amber color, about 8-10 minutes.
  7. Remove from heat and carefully stir in the butter and heavy cream until smooth. Add the sea salt and mix well.
  8. Pour the salted caramel over the cookie dough in the pan, then drop spoonfuls of the remaining cookie dough on top of the caramel.
  9. Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
  10. Allow to cool completely in the pan.
  11. For the chocolate drizzle, melt the chocolate chips and coconut oil together in a microwave-safe bowl in 30-second intervals, stirring until smooth. Drizzle over the cooled bars.
