- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour

- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- For the Salted Caramel:
- 1 cup granulated sugar
- 6 tablespoons unsalted butter
- 1/2 cup heavy cream
- 1 teaspoon sea salt
- For the Chocolate Drizzle:
- 1 cup semi-sweet chocolate chips
- 1 tablespoon coconut oil
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Spread half of the cookie dough evenly in the prepared baking pan.
- In a saucepan over medium heat, combine the granulated sugar for the caramel. Stir constantly until it melts and turns a deep amber color, about 8-10 minutes.
- Remove from heat and carefully stir in the butter and heavy cream until smooth. Add the sea salt and mix well.
- Pour the salted caramel over the cookie dough in the pan, then drop spoonfuls of the remaining cookie dough on top of the caramel.
- Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
- Allow to cool completely in the pan.
- For the chocolate drizzle, melt the chocolate chips and coconut oil together in a microwave-safe bowl in 30-second intervals, stirring until smooth. Drizzle over the cooled bars.
