- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup milk
- 1/4 cup tequila
- 1/4 cup lime juice
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- Zest of 1 lime
- Salt for garnish
- Optional: lime slices for decoration
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
- Cream together the softened butter and sugar until fluffy and pale.
- Add the eggs, one at a time, beating well after each addition.
- Mix in the lime juice, tequila, and lime zest until well combined.
- Whisk together the flour, baking powder, baking soda, and salt in another bowl.
- Gradually add the dry ingredients to the wet mixture, alternating with milk.
- Fill each cupcake liner about 2/3 full with the batter.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Allow to cool completely before icing.
- Top with salted buttercream frosting and garnish if desired.
Notes
Cupcakes can be made ahead and stored in an airtight container at room temperature for up to three days or refrigerated for a week.
