  • 2 red bell peppers
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup vegetable broth
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roast the red bell peppers until charred, then peel and chop them.
  3. In a skillet, heat olive oil over medium heat and sauté the onion and garlic until translucent.
  4. Add the roasted peppers and vegetable broth to the skillet, and simmer for 10 minutes.
  5. Season the tilapia fillets with salt and pepper, then place them in the skillet with the sauce.
