A deliciously rich Chicken Marsala featuring tender chicken in a creamy mushroom sauce that transports you to Italy with every bite.


Ingredients

  • 4 boneless, skinless chicken breasts (about 1 1/2 pounds)
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup all-purpose flour, for dredging
  • 4 tablespoons olive oil, divided
  • 8 ounces cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • 1/2 cup Marsala wine
  • 1 cup chicken broth
  • 2 tablespoons unsalted butter
  • 1/4 cup heavy cream
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Pound the chicken breasts to about 1/2 inch thickness and season with salt and pepper.
  2. Dredge in flour, shaking off excess.
  3. Sear the chicken in 2 tablespoons olive oil for 4–5 minutes on each side until golden brown.
  4. Remove the chicken from the skillet and set aside.
  5. Sauté the mushrooms in the same skillet with the remaining olive oil for 5–6 minutes.
  6. Add minced garlic and cook for another 1–2 minutes.
  7. Deglaze with Marsala wine, scraping brown bits from the skillet. Reduce for 2–3 minutes.
  8. Stir in chicken broth and simmer for 5 minutes.
  9. Blend in butter and heavy cream until smooth, then return chicken to the skillet.
  10. Simmer for 5 minutes, spooning sauce over chicken.
  11. Garnish with fresh parsley before serving.

Notes

This dish is perfect with creamy mashed potatoes or garlic bread to soak up the sauce.
