A deliciously rich Chicken Marsala featuring tender chicken in a creamy mushroom sauce that transports you to Italy with every bite.

- 4 boneless, skinless chicken breasts (about 1 1/2 pounds)
- Salt and freshly ground black pepper, to taste
- 1/2 cup all-purpose flour, for dredging
- 4 tablespoons olive oil, divided
- 8 ounces cremini mushrooms, sliced
- 2 cloves garlic, minced
- 1/2 cup Marsala wine
- 1 cup chicken broth
- 2 tablespoons unsalted butter
- 1/4 cup heavy cream
- 2 tablespoons chopped fresh parsley
Instructions
- Pound the chicken breasts to about 1/2 inch thickness and season with salt and pepper.
- Dredge in flour, shaking off excess.
- Sear the chicken in 2 tablespoons olive oil for 4–5 minutes on each side until golden brown.
- Remove the chicken from the skillet and set aside.
- Sauté the mushrooms in the same skillet with the remaining olive oil for 5–6 minutes.
- Add minced garlic and cook for another 1–2 minutes.
- Deglaze with Marsala wine, scraping brown bits from the skillet. Reduce for 2–3 minutes.
- Stir in chicken broth and simmer for 5 minutes.
- Blend in butter and heavy cream until smooth, then return chicken to the skillet.
- Simmer for 5 minutes, spooning sauce over chicken.
- Garnish with fresh parsley before serving.
Notes
This dish is perfect with creamy mashed potatoes or garlic bread to soak up the sauce.
