Description

A delicious and vibrant dish combining shrimp and peaches in tacos, topped with a refreshing slaw and zesty lime crema.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 ripe peaches, sliced
  • 8 small corn tortillas
  • 2 cups cabbage, shredded
  • 1/2 cup carrots, shredded
  • 1/4 cup cilantro, chopped
  • 1/2 cup sour cream
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix shrimp with olive oil, chili powder, salt, and pepper.
  2. Heat a skillet over medium heat and cook the shrimp until pink and cooked through, about 3-4 minutes.
  3. In another bowl, combine cabbage, carrots, and cilantro to make the slaw.
  4. In a small bowl, mix sour cream and lime juice to create the lime crema.
  5. Warm the corn tortillas in a skillet or microwave.
  6. Assemble the tacos by placing shrimp and peach slices on the tortillas, topping with slaw and lime crema.
  7. Serve immediately and enjoy!

Notes

  • For a spicier kick, add jalapeños to the slaw.
  • Can substitute shrimp with grilled chicken for a different protein option.
  • Fresh peaches can be replaced with mango for a tropical twist.
