- 1 lb shrimp, peeled and deveined
- 2 ripe peaches, sliced
- 8 small corn tortillas
- 2 cups cabbage, shredded
- 1/2 cup carrots, shredded
- 1/4 cup cilantro, chopped
- 1/2 cup sour cream
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- In a bowl, mix shrimp with olive oil, chili powder, salt, and pepper.
- Heat a skillet over medium heat and cook the shrimp until pink and cooked through, about 3-4 minutes.
- In another bowl, combine cabbage, carrots, and cilantro to make the slaw.
- In a small bowl, mix sour cream and lime juice to create the lime crema.
- Warm the corn tortillas in a skillet or microwave.
- Assemble the tacos by placing shrimp and peach slices on the tortillas, topping with slaw and lime crema.
- Serve immediately and enjoy!
