  • Pork Chops: 4 bone-in pork chops, about 1 inch thick
  • Marinade:
    • 4 cloves garlic, minced
    • 1 lemon, juiced and zested
    • 1/4 cup olive oil
    • 1 tablespoon fresh rosemary, chopped
    • 1 tablespoon fresh thyme, chopped
    • 1 teaspoon red pepper flakes
    • Salt and pepper to taste
  • Coating:
    • 1 cup breadcrumbs
    • 1/2 cup grated Parmesan cheese
    • 1 teaspoon dried oregano

Instructions

  1. In a bowl, combine garlic, lemon juice, lemon zest, olive oil, rosemary, thyme, red pepper flakes, salt, and pepper to create the marinade.
  2. Place the pork chops in a resealable bag and pour the marinade over them. Seal the bag and refrigerate for at least 1 hour, preferably overnight.
  3. Preheat the oven to 400°F (200°C).
  4. In a shallow dish, mix breadcrumbs, Parmesan cheese, and oregano.
  5. Remove the pork chops from the marinade, allowing excess to drip off, then coat each chop in the breadcrumb mixture, pressing gently to adhere.
  6. Heat a large oven-safe skillet over medium-high heat and add a drizzle of olive oil.
  7. Once hot, sear the pork chops for 3-4 minutes on each side until golden brown.
  8. Transfer the skillet to the preheated oven and bake for an additional 10-15 minutes, or until the internal temperature reaches 145°F (63°C).
  9. Let the pork chops rest for 5 minutes before serving.
