Instructions
- In a bowl, combine garlic, lemon juice, lemon zest, olive oil, rosemary, thyme, red pepper flakes, salt, and pepper to create the marinade.
- Place the pork chops in a resealable bag and pour the marinade over them. Seal the bag and refrigerate for at least 1 hour, preferably overnight.
- Preheat the oven to 400°F (200°C).
- In a shallow dish, mix breadcrumbs, Parmesan cheese, and oregano.
- Remove the pork chops from the marinade, allowing excess to drip off, then coat each chop in the breadcrumb mixture, pressing gently to adhere.
- Heat a large oven-safe skillet over medium-high heat and add a drizzle of olive oil.
- Once hot, sear the pork chops for 3-4 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for an additional 10-15 minutes, or until the internal temperature reaches 145°F (63°C).
- Let the pork chops rest for 5 minutes before serving.
