Ingredients

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Season the beef roast with salt, pepper, and garlic powder, ensuring an even coating.
  3. In a large Dutch oven, heat 2 tablespoons of oil over medium-high heat. Sear the roast on all sides until browned, about 4-5 minutes per side.
  4. Remove the roast and set aside. In the same pot, add onions, carrots, celery, and garlic, sautéing until softened, about 5-7 minutes.
  5. Pour in the cranberry juice, balsamic vinegar, brown sugar, and Dijon mustard, stirring to combine.
  6. Add the beef broth and bring the mixture to a simmer.
  7. Return the roast to the pot, add the rosemary and thyme, cover, and transfer to the oven.
  8. Braise for 3-4 hours, or until the beef is fork-tender and the internal temperature reaches 195°F (90°C).
