- 2 lbs beef chuck, cut into 1-inch cubes
- 4 cups beef broth
- 2 cups carrots, sliced
- 1 cup onions, chopped
- 2 cups potatoes, diced
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Brown the beef cubes on all sides, then transfer to a slow cooker.
- Add onions, carrots, potatoes, and garlic to the slow cooker.
- In a bowl, mix beef broth, tomato paste, Worcestershire sauce, thyme, salt, and pepper.
- Pour the mixture over the beef and vegetables in the slow cooker.
- Cover and cook on low for 8 hours or high for 4 hours until the beef is tender.
- Serve hot and enjoy your hearty stew!
Notes
- For a thicker stew, mix 2 tablespoons of cornstarch with cold water and stir into the stew during the last hour of cooking.
- Feel free to add other vegetables like peas or green beans for extra nutrition.
