Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 2 cups carrots, sliced
  • 1 cup onions, chopped
  • 2 cups potatoes, diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Brown the beef cubes on all sides, then transfer to a slow cooker.
  3. Add onions, carrots, potatoes, and garlic to the slow cooker.
  4. In a bowl, mix beef broth, tomato paste, Worcestershire sauce, thyme, salt, and pepper.
  5. Pour the mixture over the beef and vegetables in the slow cooker.
  6. Cover and cook on low for 8 hours or high for 4 hours until the beef is tender.
  7. Serve hot and enjoy your hearty stew!

Notes

  • For a thicker stew, mix 2 tablespoons of cornstarch with cold water and stir into the stew during the last hour of cooking.
