  • For the Quesadillas:
    • 1 lb ground beef
    • 1 cup shredded cheddar cheese
    • 1 cup shredded Monterey Jack cheese
    • 4 large flour tortillas
    • 1 tablespoon olive oil
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1 teaspoon smoked paprika
    • 1/2 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1/2 cup diced jalapeños (fresh or pickled)
  • For the Dipping Sauce:
    • 1/2 cup sour cream
    • 1/4 cup mayonnaise
    • 1 tablespoon lime juice
    • 1 teaspoon taco seasoning

Instructions

  1. In a skillet over medium heat, add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat.
  2. Stir in garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well and remove from heat.
  3. Lay one tortilla flat and sprinkle half of the cheddar and Monterey Jack cheese evenly over it.
  4. Add half of the cooked ground beef mixture and half of the diced jalapeños on top of the cheese.
  5. Sprinkle the remaining cheese over the beef and top with another tortilla.
  6. Heat olive oil in a large skillet over medium heat. Carefully place the quesadilla in the skillet and cook for 3-4 minutes until golden brown.
  7. Flip the quesadilla and cook for an additional 3-4 minutes until the other side is golden and the cheese is melted.
  8. Remove from the skillet and let it cool for a minute before slicing into wedges. Repeat with remaining ingredients.
