- For the Quesadillas:
- 1 lb ground beef
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 4 large flour tortillas
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup diced jalapeños (fresh or pickled)
- For the Dipping Sauce:
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1 tablespoon lime juice
- 1 teaspoon taco seasoning
Instructions
- In a skillet over medium heat, add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat.
- Stir in garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well and remove from heat.
- Lay one tortilla flat and sprinkle half of the cheddar and Monterey Jack cheese evenly over it.
- Add half of the cooked ground beef mixture and half of the diced jalapeños on top of the cheese.
- Sprinkle the remaining cheese over the beef and top with another tortilla.
- Heat olive oil in a large skillet over medium heat. Carefully place the quesadilla in the skillet and cook for 3-4 minutes until golden brown.
- Flip the quesadilla and cook for an additional 3-4 minutes until the other side is golden and the cheese is melted.
- Remove from the skillet and let it cool for a minute before slicing into wedges. Repeat with remaining ingredients.
