Description

    • 1 French baguette, sliced into 1/2 inch pieces
    • 2 tablespoons olive oil
  • For the Egg Mousse:
    • 4 large eggs
    • 1/2 cup heavy cream
    • 1 tablespoon Dijon mustard
    • 1 tablespoon fresh dill, chopped
    • 1 tablespoon lemon juice
    • Salt and pepper to taste

    • 8 ounces smoked salmon, sliced
    • Fresh dill sprigs for garnish
    • Lemon wedges for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Arrange the baguette slices on a baking sheet and brush both sides with olive oil.
  3. Bake for 8-10 minutes, or until golden brown and crispy, flipping halfway through.
  4. While the crostini are baking, place the eggs in a saucepan and cover with cold water. Bring to a boil, then reduce heat and simmer for 10 minutes.
  5. Remove the eggs, cool them under cold running water, and peel.
  6. In a blender, combine the peeled eggs, heavy cream, Dijon mustard, dill, lemon juice, salt, and pepper. Blend until smooth and creamy.
  7. Transfer the egg mousse to a piping bag or a bowl for easy serving.
  8. Once the crostini are cool, pipe or spoon the egg mousse onto each slice, then top with a piece of smoked salmon.
  9. Garnish with fresh dill sprigs and serve with lemon wedges on the side.
