Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, mix buttermilk, eggs, and melted butter until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
- Grease a mini muffin tin and fill each cup about 2/3 full with the cornbread batter.
- Bake for 12-15 minutes or until the tops are golden brown and a toothpick inserted comes out clean.
- While the poppers are baking, prepare the honey butter by mixing softened butter, honey, and cinnamon in a small bowl until smooth.
- Once the poppers are done, let them cool for a few minutes before serving with honey butter on the side.
