  • Honey Butter:
    • 1/2 cup unsalted butter, softened
    • 1/4 cup honey
    • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, mix buttermilk, eggs, and melted butter until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
  5. Grease a mini muffin tin and fill each cup about 2/3 full with the cornbread batter.
  6. Bake for 12-15 minutes or until the tops are golden brown and a toothpick inserted comes out clean.
  7. While the poppers are baking, prepare the honey butter by mixing softened butter, honey, and cinnamon in a small bowl until smooth.
  8. Once the poppers are done, let them cool for a few minutes before serving with honey butter on the side.
