Ingredients

  • 1 cup black beans, rinsed and drained
  • 1 cup corn, canned or frozen
  • 1 red bell pepper, diced
  • 1 avocado, sliced
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 4 large tortillas
  • 1/2 cup ranch dressing
  • 1 tablespoon taco seasoning

Instructions

  1. In a large bowl, combine the shredded chicken, black beans, corn, diced red bell pepper, taco seasoning, and ranch dressing.
  2. Mix well until all ingredients are evenly coated.
  3. Lay out the tortillas on a flat surface.
  4. Divide the chicken mixture evenly among the tortillas.
