Description

Delicious and nutritious spiced pumpkin and oatmeal breakfast bars perfect for a healthy start to your day.


Ingredients

Scale
  • 1 cup pumpkin puree
  • 1 cup rolled oats
  • 1/2 cup almond milk
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a large bowl, mix together the pumpkin puree, almond milk, and honey or maple syrup.
  3. Add the rolled oats, cinnamon, nutmeg, ginger, baking powder, and salt to the mixture and stir until well combined.
  4. If using, fold in the chopped nuts.
  5. Pour the mixture into the prepared baking dish and spread it evenly.
  6. Bake for 25-30 minutes or until the edges are golden brown.
  7. Allow to cool before cutting into bars.

  • Store in an airtight container for up to a week.
  • These bars can be frozen for longer storage.
